Of the 11 ha of small plots cultivated in a classic style on  soils covered by volcanic ashes (picón) as is prefered by the Negramoll, queen of varieties in La Palma, this reference returns for the lovers of the great atlantic wines.

Only the variety Negramoll has been used here with vines of 80-150 years old. Once selected the grapes on the vines, they are de-stemmed and the whole grapes introduced in a stainless steel tank where it ferments for 10 days. The malolactic fermentation was carried out in 230 liter barrels of french oak, where it remains aging on it’s lees until it’s ready.  At last it’s clarified and bottled.

Only the variety Negramoll has been used here with vines of 80-150 years old.

Malolactic fermentation was done in 230 liters barrels of French oak where it has remained for six months on its lees for refinement.
